Garden Pickles

This is a super quick recipe for tasty snacking pickles that can feature any of your favorite garden herbs, favorite vegetables, and even certain fruits!

Ingredients for the brine

(Makes two 250 ml jars or one 500 ml jar)

  • 1 c apple cider vinegar

  • 1/2 c water

  • 2 tbsp brown sugar or 3 tbsp raw honey

  • 1 tbsp salt

Quick and Easy Cucumber with Herbs

(for two 250 ml jars or one 500 ml jar)

  • 10 garlic cloves

  • 20 gotu kola leaves

  • 2 Cuban oregano leaves

  • 1 cucumber

Method

  1. Mix vinegar, water, salt, sugar, & black pepper in a container and set aside.

  2. Pack cucumbers, garlic, gotu kola oregano (or whatever ingredients you choose) evenly into two jars.

  3. Pour the brine over the cucumbers.

  4. Cover and refrigerate.

Variations & Substitutions

Instead of cucumbers feel inspired to try:

  • green mango

  • heart of palm

  • bok choi stems

  • beet

  • carrot

  • radishes

  • red onion

  • jalapeño

Some of my favorite herbs to add in are:

  • Small guanabana twigs and leaves

  • turmeric

  • ginger

  • peppercorns

  • calendula blossoms

  • gotu kola leaves

  • Cuban oregano

  • Vana tulsi

  • garlic
